heat oven to 400°F.
prepare classic crisco crusts (3 crusts total); reserve one crust for star garnish. press one crust into 9-inch pie plate. do not bake.
pare, core and slice apples; toss with the sugar, flour and cinnamon. turn into pastry-lined 9-inch pie plate; dot with butter. moisten edges with water; cover with top crust. seal and flute edge. brush with egg white glaze. cut slits for escape of steam.
roll reserved classic crisco crust to 1/8-inch thickness. with small 1-1/2-inch star cookie cutter, cut 20-25 stars.
place 1 star on rim of top crust; brush with egg glaze. place another star, brush with egg glaze. repeat until rim is covered. sprinkle top with sugar.bake at 400°F for 30-40 minutes, until pie is desired brownness and apples are tender. cover the top with foil during baking if necessary to prevent over browning.
