heat 2 or 3 inches crisco shortening to 365°F in deep fryer or deep saucepan.
wash and pare potatoes. cut lengthwise into strips about 1/2 x 1/2 inch or 1/4 x 1/4 inch. pat dry with paper towels.
fry, a few at a time, about 10 minutes for 1/2 inch strips or 6 minutes for 1/4 inch strips or until crisp and golden.
drain on paper towels. salt lightly. serve immediately.
