cut cheese into 1/2-inch cubes. dip in beaten eggs, then coat with crumbs. repeat dipping and coating.
chill coated cheese cubes for at least 30 minutes before frying.
heat crisco to 365°F in a deep saucepan or deep fryer.
fry 6 coated cheese cubes at a time for 30 seconds or until golden brown.
drain on paper towels. serve hot.
