heat oven to 350°F. spray baking sheet with crisco no stick cooking spray. in the bowl of an electric mixer, combine shortening, brown sugar, honey, granulated sugar, water, egg and vanilla. beat at low speed until blended. increase speed to medium; beat until light and creamy.
in a small bowl, combine flour, cinnamon, baking soda and salt. at low speed, gradually add flour mixture to creamed mixture. mix until well blended. stir in oats. mix until well blended. stir in raisins and pecans. drop by heaping tablespoonfuls onto prepared baking sheet.
bake for 10 to 12 minutes or until golden brown. do not overbake. cool 3 to 5 minutes on baking sheet. remove cookies to rack to cool completely.
note: for small cookies, drop dough by heaping teaspoonfuls onto greased baking sheet. bake for 9 to 11 minutes. makes 4 to 5 dozen small cookies.
