preheat oven to 350°F. spray a 9 x 5 loaf pan with crisco no stick cooking spray; set aside.
in a large bowl, mix eggs and buttermilk with a fork. add nuts, cheese and olives. add homemade crisco quick bread mix and salt; combine until moistened.
spoon batter into prepared loaf pan. bake 35-40 minutes. cool for 10 minutes on a rack, remove from pan, and cool completely before slicing.
serve with cream cheese.
